Widely used for grilling, charcoal is often produced from tropical forests that, exhausted by an excessively intense rhythm of production, see their extension progressively reduced. This bitter awareness has led the owners of the Argentinean restaurant Gran Fierro in Prague to take advantage of a change of location to rethink their identity with the complicity of the Formafatal architectural studio, already the author of the previous interior design.

Formafatal evokes through dark tones and tactile stimuli the identity of a cuisine based on wood ember grill. Which redeems part of its impact through the self-production of vegetable charcoal, turned into a trophy displayed on the walls.

The desired renewal has first of all taken hold through a strengthening of the sustainability criteria: to feed the embers at the base of Argentine meat cooking, the restaurant has come to self-produce bio charcoal made from food waste produced in the kitchen. The charcoal is also celebrated by the interior design: many small pieces are displayed in the concrete niches above the tables, contributing to the story of this incisive change.
All around, the interiors make bare concrete and dark tones, declined on the palette of the grill, a metaphor of a raw kitchen celebrated by the menu. Steel beams are used as a base for the benches, while iron bars are used as shelves for wine bottles left in sight. The leather's warm tones recall another piece of Argentinean identity, tempering the industrial aesthetic through a warm touch of sophistication.
