Arkteam: Terkenlis

In the historic centre of Thessaloniki, the Greek architects complete a new store for bakery Terkenlis, combining contemporary materials with traditional elements.

Located in a historically listed building in the centre of Thessaloniki, Arkteam's recently completed Terkenlis store belongs to a famous patisserie and bakery brand which was founded in 1948. The city is Greece's second largest, and the 200 square-meter cafe is located just blocks from the city's historic bay. The project contains a labyrinthian assemblage of marble countertops and red cafe chairs, arranged around a central bar area with a variety of uses. While providing multiple service points for the customer, the open kitchen and counter exposes the process of making to store patrons, giving a contemporary flair to the historic brand.

For the first time, the preparation area becomes part of the sales area. The baking of Terkenlis' infamous brioche is visible and acts as a key player in space. A multi-sensorial experience takes the back-room tasks of baking and makes them a strong point by revealing them as craft. Spatially, this deterritorialization and linkage creates a dynamic environment and a bustling atmosphere, with bakers, salespeople, and customers interacting.

The project reinterprets the building's atmosphere and revisits the original Terkenlis bakery in Aristotelous Square. By introducing a cutting-edge programmatic arrangement contrasted with the showcase of time-tested recipes and tradition of Terkenlis' brand, Arkteam sought to express the company's desire for progress alongside respect for history. This sentiment is echoed materially, by utilizing contemporary metals, stone paneling, and glass while integrating the original elements and materials from the family's first store within the historic building concrete framed brick building.
